Greenfood and Tekinn to Transform Vegetable Scraps into Nutritious Raw Material

TekinnCabbage scraps are transformed into valuable raw material – with the potential to reshape the map for future food systems and their waste streams.


Lund, Sweden –
SmiLe company Tekinn, together with Greenfood, one of the Nordic region's leading groups in healthy food, has received support from Vinnova to turn fibrous vegetable parts into nutritious raw material using fermentation. Thanks to this support, 400 tons of cabbage scraps can be transformed into valuable raw material, with the potential to reshape the map for future food systems and their waste streams.

 

In 2023, Greenfood joined forces with the Swedish biotech company Tekinn AB, and together they launched an initial pilot project to transform waste into edible food through a unique fermentation process. Not only does this process use bacteria to break down insoluble fibers in the waste, making them edible, but it also enriches the material with nutrients, flavor, texture, and shelf life. The continuation of this pilot project has now been granted further support from Vinnova.

 

According to Vinnova, the project demonstrates a "high level of innovation and significant societal relevance". With its aim to convert food losses into nutritious food products, the project is expected to strengthen competitiveness in the food sector and enhance system resilience in the face of future challenges, such as climate change and uncertain global supply chains.
